Python Full Stack vs Java Full Stack vs Data Science

Short answer

Python Full Stack and Java Full Stack both train you to build complete web applications; they differ mainly in the backend language and framework. Data Science uses Python too, but for analysing data and building models rather than building web applications. Choose by the kind of work you want to do every day.
